As we all gradually shift to a more homey, cosy routine with autumn around the corner and cooler days already here, there’s definitely more of a pull towards baking up a storm in the kitchen. Spurred on by the excitement for The Great British Bake-Off which starts next week, we’ve selected just a few of our favourite baking recipes from renowned bakers and producers across The Cotswolds.

Spiced biscuits from Thyme

Thyme’s little village within a village at Southrop Manor Estate is famous for its peaceful, nature-inspired and quality stays, spa and restaurant. Their modern British food is rooted in a passion for the local land and menus change with the season. Led by head chef Charlie Hibbert, the chefs and gardeners produce some of the tastiest food in The Cotswolds so you know their recipe for spiced biscuits is going to be something special.

Full of warm flavours of nutmeg, cinnamon, ginger and honey, these biscuits are perfect for autumn and winter.

Hot cross cinnamon twist from Daylesford

The place to go in The Cotswolds for fresh, locally grown ingredients and quality bakes always served up in their cafe, Daylesford recipes are household favourite. We love this autumnal twist on a hot cross bun.

Cinnamon is a harmonious accompaniment to a cup of tea and the sharing aspect of this cinnamon treat makes it perfect to serve up for tea and a catch up with friends or family.

Focaccia from Matthews Cotswold Flour

One of the UK’s oldest family-run flour mills, Matthews Cotswold Flour have been milling in the heart of The Cotswolds since the 1800s. The family pride themselves on creating premium grains in partnership with local farmers who use organic methods, making their flours one of the best you can buy.

With a passion for quality ingredients and baking, they have an awesome selection of recipes across their site and we love trying out the savoury and bread suggestions. We’d highly recommend their recipe for focaccia which has the perfect balance of a soft consistency with crunchy edges. You can get creative with focaccia and make the flavours and toppings work for you, whether that’s a simple rosemary and sea salt topping or you’re looking to use up a few veg from the fridge.

Chocolate Mocha Torte from Susie Whitfield of The Cotswolds Baking Workshop

Susie is a talented chef who’s mastered British teatime classics and also won Gordon Ramsey’s Culinary Genius USA. Today, Susie offers really fun baking experiences and classes in the heart of The Cotswolds and works with local producers to showcase the quality ingredients made right here among the rolling hills.

For those looking for a free-from bake, her Chocolate Mocha Torte is a delicious gluten-free treat that will be thoroughly enjoyed by anyone with a sweet tooth!
